Lovely Luscious Cinnamon Nutcakes #lowcarb #recipe

3 large eggs
1/4c heavy cream
1/4c almond flour
1/4c coconut flour
1/2t vanilla
dash salt
1/2t baking powder
1t cinnamon
1T brown sugar sub

Whisk first 2 ingredients together until they start to lighten up; add remaining ingredients and blend thoroughly. Scoop onto hot coconut oil-coated griddle; when they come easily away from the surface, flip to cook other side.

I put butter between them as I put them on the plate, and then SF syrup over the top. Very very rich that way and I don't eat a whole lot :).

  2. I have tried vanilla protein powder with less than stellar results, but polydextrose works pretty well. I have some lowcarb baking mix (Bob's Red Mill) that I might try if I didn't coconut flour but I don't know how well it would work.

  5. My mom lives in Michigan near a bulk food store that sells unsweetened coconut. When I get over there I make a point of getting BAGS of the stuff. I can whirl it in the food processor and get flour.

    Where in "northern" Michigan do you live, ChiaOwl? I'm getting as far as Marquette in a couple of weeks.

  6. Yes I have quite a few resources for unsweetened coconut also...there is a great place for that as well as nut flours downstate that I also order from but mostly I just buy from one of the many Amish and Mennonite stores around.

    I live in Houghton Lake. We plan to retire to Marquette in a few years, actually :).

  10. Moving is a pain no matter what the weather if you ask me :)...but this has been awful this year! My mom's family is from that area...lots of family history around there; we get to Grand Rapids for shopping trips a couple of times a year. All the best in your new place!
