I had about 2c of leftover cauliflower with cheddar melted on it in the fridge and wanted a side dish to go with my pork. So I whipped up a couple of eggs, pulsed the cauli/cheese in the processor until it was like rice (cold cheese chops up just fine), and added "bread crumbs" (my standard crumbs are 2 parts ground porkie to 1 part parmesan from the can). Mixed in some onion and garlic powder - it had enough salt already - and let it sit so everything would come together.
With the resulting mixture I first fried patties in bacon fat by dropping it by several spoonsful into the hot fat and pressing it down with the turner, flipping them once the bottom was brown and crispy (about 4-5 minutes) to let the other side also brown and crisp up. That used up half the mixture, so I did the rest as if it was hash browns; I added a little more bacon fat to the pan, then the cauli mixture, and stirred it around every few minutes.
I personally like the patties better, but the "cauli browns" were also very good!
Meanwhile I fried up some pork cutlets I had, also in bacon fat, seasoned with just sea salt and garlic powder.
I will make sure that, when I have cauliflower from now on, I will make enough to have leftovers so that I can make these again!

What I 8 Fri/Sat #lowcarb
Friday was some leftover grilled pork steak and some cocktail-sized pumpnickel slices with SF jam at lunchtime.
Saturday (today) was a chicken leg and some spinach with italian blend shredded cheese and butter on it aerlier in the afternoon, and some dreamfields with butter and italian blend shredded cheese for supper. I'll probably have a little SF ice cream tonight, I'm hungrier for some reason dangit! :) But I know better than to ignore the signal...I'll eat everything in sight if I do!

Thursday 1/28 What I 8 Today, + Cheesy Spinach Noodles #lowcarb
Broiled pork chop with a cheesy spinach-noodle side dish; BBQ pork rinds; sliced cheese. My appetite remains pretty low compared to what it was before last week.
Spinach dish was excellent. Drained a package of shirataki noodles, then heated in bacon fat with 10 oz. previously-frozen spinach. When heated through, added 4 oz full-fat cream cheese, 2 Tbsp butter, and 4 oz. shredded Italian cheese blend. Reduced heat to low and covered until spinach was thoroughly melted. Enough flavor from bacon fat and cheeses, no salt or other seasonings required. I ate about 1/4 of the entire pan with my pork chop.
Semi-boneless sirloin chops were $1.29/lb on sale. Noodles were $1.99/pkg. Spinach was 59¢. Cheeses used totalled $1.40. Butter, minimal (paid $1.79/lb.). Pork Rinds were $3.00 for a 10.5 oz jug - I ate about 6-7 pieces. Bought the cheese slices in a 5# carton, my 3 slices were negligable in cost. Total for what I 8 today: about $4.00 including a couple of cups of coffee with half'n'half and sweet'n'low.
