A Great Food Day Today, Too! #lowcarb

My beloved Petey made us ham and cheese omelets for breakfast today, really hit the spot!

Midday meal was tilapia, oven-fried in some olive oil and butter at a high (425F) temp until crispy around the edges and tender in the center, and green salads with shrimp and ranch dressing.

Supper was some Dreamfield's spaghetti with butter, just enough low-carb pasta sauce to turn it pink, and parmesan cheese.

Really a lovely day, with simple, inexpensive, but delicious food!

What I 8 Fri/Sat #lowcarb

Yesterday Pete picked up some pork bits on sale (like ends and pieces of country ribs) and cooked them up in the electric fryer with onion and mushroom and seasonings. We had buttered green beans with them. 50c for the beans, $2.32 for the meat, 35c for the onion, and 59c for the can of mushrooms. All served 2.

Today we had a rack of spare ribs that needed to be cooked, so they spent the day in the oven. I added BBQ sauce that wasn't low carb, so didn't intend on eating any, but ended up have 4 bones from the shorter end. That's all we ate, but later had a little dreamfield's with butter, olive oil, garlic, and cheese. Was a strange day, meals just didn't happen, we just ate when we ate. The ribs had been on sale for $4.80; 1/4 box of dreamfield's 70c, then add a sprinkle of cheese on top, the butter, the olive oil, and the granulated garlic...perhaps another $1, generously speaking.

One-meal day on Friday, just a couple of snacks, really, today - although either could have been a meal.

Tomorrow we'll have to load up with veggies, I'm craving them after not having any today.

Church Potlucks & What I 8

Yesterday was our monthly potlock after church. For some reason everybody brings dishes with noodles, potatoes, rice, and/or gravy! Plus the desserts of course. So I always take a main dish type dish to pass that is low carb, so at least I can eat. What I did yesterday was fill my plate half-full with my chicken-and-vegetable dish, then take a couple of bites of the least-carby-looking things from the table. That seemed to work real well. I would have liked to take my whole meal for myself but that would be rude. I wish there were a better solution...

Being sick (again!) I didn't cook for supper, we ended up with a pizza and I had a couple of slices but didn't overeat like I usually would. Yesterday was a pretty carby day, but it sure could have been worse!

Today was a typical day. 2 eggs fried in bacon fat for breakfast (I rarely eat breakfast but Pete made them for me so I ate them), and Dreamfield's spaghetti tossed with butter and olive oil, a little ground beef, and some cheese sprinkled on top.

I'm feeling somewhat lighter today than I have for a while. I don't weigh myself because I'm not obsessing about losing weight but it's a nice feeling nonetheless :).
