Shakin' It Up, and Amazing Steak Dinner #Lowcarb #Recipe

I haven't been posting the samo-samo meals I've been eating recently, and in fact have started getting bored. So the last few days I've tried to shake it up a bit, using food I already have stockpiled. (For those of you following my grocery shopping posts, I haven't done a big shopping in at least a couple of months - yeah, I have that much stuff on my shelves and in my big freezer! Just filling in with the perishables, such as fresh produce, and dairy.)

Sunday dinners I like to "fancy it up a bit" especially since my mom spends Sundays with us - the nursing home where she lives has good food, but it tends to be a bit "institutional" anyway. This past Sunday I made some NY strips on the griddle. First I started frying up a pound of bacon because I needed the fat. While that was cooking I seasoned the steaks (onion/garlic/chili powders, sea salt) and let them sit while I halved half-thawed brussels sprouts and yellow squash slices - just had a small amount left in each package I wanted to use up - and quartered, then thinly sliced, a medium yellow onion.

After spreading some fresh bacon fat on the hot hot hot griddle, I put the steaks on. Then I removed the bacon from the frying pan and much of the remaining fat for later use, and tossed the veggies in the same frying pan. They required frequent tossing to brown evenly and cook through. The steaks cooked about 5 minutes on the first side and 3 on the 2nd, then I removed them to a platter and tossed about a cupful of straw mushrooms (from a can) right on the hot griddle with the bacon fat and the seasonings the steak left behind. As the liquid came out of the 'shrooms and I scraped/tossed them, they deglazed the griddle nicely and picked up some wonderful flavor. Meanwhile I also add butter, sea salt, and a drizzle of balsamic vinegar to the vegetables.

What a lovely meal! A platter of medium-rare steaks with a pile of delicious mushrooms and colorful vegetables next to them...it was a feast for the eyes as well as the palate! Unforunately, after a day trip the day before, I'd left my camera somewhere out of reach (found it later) and we were too hungry to wait for me to find it...but I will definitely be making this again!

The steaks had been on sale for $2.49/lb - I used 3# of meat - certainly less than $2 in vegetables (and that's figuring HIGH), a $1 can of mushrooms...some butter, bacon fat, and seasonings - dinner for 4 adults plus a toddler for right around $10!

Every time I make a meal like this one, I want to defy the lowcarb naysayers to show me why they think that low carb eating is unhealthy...pfffffft! :)

WHOA! Great Web Resource! #lowcarb

I happened upon the eBookBeta site this morning while looking for resources for my other blog. After I finished there, I did a quick search for low carb recipes and really hit pay dirt! What an AMAZING resource, not just for this subject, but seemingly for any other subject as well!

In the search that I've linked to my title above, the first link I clicked was invalid (I hadn't found any invalid links in my earlier search for my other blog), but the second one - 300 Healthy + Tasty Low Carb Recipes - looked very promising. As I was perusing it I saw that it might not be appropriate for all low carb plans, as some of the recipes do use ingredients that the more conservative of us low-carbers might not use. But the same can be said for many "low-carb" recipes, as that phrase has different meanings for different people and different plans. But, as always, we have to do our own research, know our own plans, be familiar with our own bodies' responses, and then change or dismiss what doesn't work for each of us.

But there are an incredible number of links to recipes and collections here, and definitely worth perusing for ideas...to say nothing of finding files of information on just about any topic! I'm really excited to have found this site :).

What I 8 Today (Mother's Day) #lowcarb

Lovely foodie day!

Started out with some oopsie french toast with SF syrup, and 2 all-natural SF sausage links.

Dinner was wonderful! I fried onions in just a touch of oil in my dutch oven, then ground sausage with the onions just until browned. Then I added a bag of frozen stir-fry veggies, a can of drained mushrooms, a container of drained water chestnuts, and some leftover cooked shredded cabbage on top. I seasoned it all with some sesame oil and some soy sauce, covered it, and let it get all heated through, to really hot.

Meanwhile in a sauce pan I put some drained and rinsed shiritake noodles (angel hair) with some butter, soy sauce, sesame oil, ginger, and garlic/onion powders. Actually I seasoned the noodles quite heavily.

When the pork and vegetables were done I served them over the noodles. EXCELLENT!

For dessert I had a couple of the SF no-bake cookies I'd made on Friday, and for an evening snack I had a bowl of heavily buttered popcorn.

The eating parts of my day really rocked!

What I 8 Today + #lowcarb Coneysagna & Motzels Recipes

I had some string cheese that wasn't stringy and I didn't care for too much, so today I cut several of them in half (across) and then into 6 "matchsticks" per half - for a total of 12 "matchsticks" per 1 ounce string cheese piece. I laid them out on parchment paper, sprinkled with a little garlic powder, and put them into the oven at 325 until they got quite brown but definitely not burnt - I had to watch carefully after a certain point. When they came out they were delightful little crispy sticks, kind of like skinny pretzels, perfect for dipping or eating plain. GREAT, cheap'n'easy too!

The for supper I had some leftover grilled brats, and also an eggplant that was starting to look a little pathetic. I thought of making lasagna with eggplant noodles but decided to shake it up. I used the thinly slice eggplant like noodles, the chopped up brats for the meat, chopped onions, and SF canned chili sauce (9gN for the whole can!) with a generous amount of plain yellow mustard mixed in for the, well, for the sauce.

I made it like lasagna in my 9x12 anchor baking dish, and put it in the oven at 350 covered with foil for about 40 minutes, then covered it with shredded sharp cheddar and uncovered for the last 15 minutes or so - until the cheese got all melty and started to brown.

I served it with cole slaw I made earlier in the day with shredded cabbage, mayo, heavy cream, sea salt, celery seed, paprika (yes, my cole slaw is always pink - but I really love a lot of paprika in it!), and my sweetener blend...

I don't think I've mentioned my sweetener blend yet...it's just a half-and-half blend of granulated Splenda, and Ideal.

So it was a great supper, and great Motzel snacks earlier in the day, all cheap, all easy!

Has It Really Been 10 DAYS??? #lowcarb

Wow, I can't believe so much time has passed. Things have been so busy here, that sitting down to blog has been one of the "I'll do that when I'm done with this" things I've needed to do...along with making yogurt and several other things. But 10 days??? I feel really badly about that!

Eating has been going just fine. Haven't had to shop for anything much, but I did go yesterday to Sav-a-Lot because I forgot to get something out of the freezer for supper. I found big fat sirloin pork chops for $1.29/lb, and they had $2 off stickers on them! So I got a bunch of those. Also ground chuck, that were $1.99/lb with 50¢ off stickers, so I got several 1# packages. A couple loaves of "light" italian bread for $1.49/loaf (usually 2/$5) for my husband, and a bag of salad mix for $1.

So far this month our grocery bill is just about $350. (I lost one receipt so I can't say for sure but that's a pretty close guess.) For 3 adults - 4 on Sundays when my mom is here - and certainly much of this will carry over into next month. It's kind of deceiving, the monthly tally; just because I buy so-much in a month, doesn't mean that's how much it costs for us to eat. At the end of each month my big freezer is more full than it was at the end of the previous month, since I stockpile when I see a sale.

Anyway, here are a couple of photos from meals I've eaten in the last 10 days, with explanations to follow:

First pic was grilled steak (lovely to have the grill out now that it's spring!), salad with an onion dressing, and halved mini-eggplants, roasted and served with a generous blob of butter on them. It was an excellent meal!

2nd pic was a GREAT salad, loaded with turkey and bacon, eaten with onion dressing, and a lowcarb tortilla that had been brushed with olive oil, topped with italian cheese blend, and stuck in a low oven for a few minutes, on the side.

Today is still up for grabs. Not sure what will be had for supper, or whatever else we'll eat. Today I've been catching up on emails and - obviously - blogging, and haven't given much thought to anything else. I'll report back :).
